Weight Watchers Crack Chicke

Ingredients:

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix (low-sodium if available)
  • 1 cup fat-free Greek yogurt
  • 1 cup reduced-fat shredded cheddar cheese
  • 8 slices turkey bacon, cooked and crumbled
  • 1 tablespoon olive oil (optional, for cooking chicken)
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. If the chicken breasts are thick, you may want to pound them to an even thickness for more even cooking.
  3. Season the chicken breasts with salt and pepper.
  4. If you’re using olive oil, heat it in an oven-safe skillet over medium-high heat. Sear the chicken breasts for about 2-3 minutes per side until browned.
  5. In a bowl, mix the Greek yogurt and ranch seasoning until well combined.
  6. Place the seared chicken breasts in the skillet or transfer them to a baking dish if you used a separate pan.
  7. Spread the ranch and Greek yogurt mixture over the chicken breasts.
  8. Sprinkle the shredded cheddar cheese over the top.
  9. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
  10. During the last few minutes of baking, sprinkle the cooked and crumbled turkey bacon over the top.
  11. Garnish with chopped green onions if desired.
  12. Serve the Weight Watchers Crack Chicken over cauliflower rice, on a salad, or with your favorite vegetables.
