Ingredients:
- 3 medium-sized Cucumbers, thinly sliced
- 1/2 medium-sized Red Onion, thinly sliced
- 1/2 cup Fat-Free Greek Yogurt
- 2 tbsp Light Mayonnaise
- 2 tbsp Apple Cider Vinegar
- 1 tbsp Fresh Dill, chopped
- Salt and Pepper to taste
Instructions:
- In a large mixing bowl, combine sliced cucumbers and red onions.
- In a separate bowl, whisk together fat-free Greek yogurt, light mayonnaise, apple cider vinegar, chopped dill, salt, and pepper. Adjust seasoning according to your taste.
- Pour the dressing over the cucumbers and red onions. Toss the salad until the vegetables are evenly coated with the dressing.
- Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
- Garnish with additional dill before serving, if desired.
