Ingredients

  • Two cups of hulled strawberries, divided
  • Half a teaspoon of granulated Sugar
  • Water 2tbsp
  • Half a cup of Heavy Whipping Cream
  • Vanilla Extract 1 teaspoon
  • Non-fat Greek yogurt 1/2 cup
  • Vanilla Meringue Cookies 3 1/2 ounces

Instructions

  • Cut four ounces of the strawberries into slices. Reserve them for the final procedure.
  • Next, chop strawberries into halves with a knife.
  • Place half of the remaining strawberries in a medium bowl.
  • Then, roughly mash them using a potato masher or fork to get a chunky puree.
  • Put aside the mashed strawberries bowl.
  • Next, add the rest of the quartered strawberries with water and sugar in a tiny pot.
  • Bring to a boil, then lower the heat by setting its flame to medium-low.
  • Then simmer this mixture.
  • Stir frequently for seven to nine minutes or until the strawberry is soft and the pulp becomes thinner.
  • After that, shift this mixture to a bowl. Put it aside until it cools.
  • Once cooled, combine the remaining chunky pulp with the chilled mixture.

Preparation Of Whipping Cream

  • Mix the vanilla extract and chilled whipped cream in a medium dish.
  • Next, beat the cream with a hand mixer at moderate speed for three to four minutes until it solidifies.
  • Then, add the Greek yogurt, and blend again at medium speed for about thirty seconds or until the mixture reaches the rigid stage.

Assembling:

  • To assemble the dish, take serving cups or a bowl.
  • Next, crush vanilla meringue cookies into small pieces by hand.
  • Now, create the layers in the cup.
  • First, place the crushed cookies in the cup.
  • Drizzle the strawberry puree, then add the third layer of chilled whipped cream and the final layer of sliced strawberries.
