Weight Watchers-Friendly Butter Cookies

 

Ingredients:

  • 1/2 cup reduced-fat butter or margarine
  • 1/4 cup granulated sugar or a sugar substitute (like Stevia)
  • 1 egg (or egg substitute)
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a mixing bowl, cream together the reduced-fat butter or margarine and sugar until light and fluffy.
  3. Beat in the egg (or egg substitute) and vanilla extract.
  4. In a separate bowl, combine the flour and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. Be careful not to overmix.
  6. Using a cookie scoop or your hands, shape the dough into small balls and place them on the prepared baking sheet.
  7. Flatten each cookie slightly with a fork or the bottom of a glass, and if desired, sprinkle with a little extra sugar or sugar substitute.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
