- 2 cups of mixed nuts (e.g., almonds, walnuts, pecans)
- 1/4 cup granulated erythritol (or another sugar substitute of your choice)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 large egg white
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a bowl, whisk the egg white until it becomes frothy but not stiff.
- In a separate bowl, mix the erythritol (or your chosen sugar substitute), cinnamon, and salt.
- Add the nuts to the frothy egg white and stir to coat them evenly.
- Gradually add the erythritol mixture to the nuts, stirring to coat the nuts with the sweetener and spices.
- Spread the coated nuts in a single layer on the prepared baking sheet.
- Bake for about 20-25 minutes, or until the nuts are toasted and the coating is set. Stir the nuts every 10 minutes to ensure even coating.
- Remove the nuts from the oven and immediately drizzle the vanilla extract over them, stirring to evenly distribute the flavor.
- Let the candied nuts cool completely on the baking sheet. They will become crisp as they cool.
- Once completely cool, break the nuts apart, and store them in an airtight container.
