Ingredients:

  • 2 cups of mixed nuts (e.g., almonds, walnuts, pecans)
  • 1/4 cup granulated erythritol (or another sugar substitute of your choice)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 large egg white
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a bowl, whisk the egg white until it becomes frothy but not stiff.
  3. In a separate bowl, mix the erythritol (or your chosen sugar substitute), cinnamon, and salt.
  4. Add the nuts to the frothy egg white and stir to coat them evenly.
  5. Gradually add the erythritol mixture to the nuts, stirring to coat the nuts with the sweetener and spices.
  6. Spread the coated nuts in a single layer on the prepared baking sheet.
  7. Bake for about 20-25 minutes, or until the nuts are toasted and the coating is set. Stir the nuts every 10 minutes to ensure even coating.
  8. Remove the nuts from the oven and immediately drizzle the vanilla extract over them, stirring to evenly distribute the flavor.
  9. Let the candied nuts cool completely on the baking sheet. They will become crisp as they cool.
  10. Once completely cool, break the nuts apart, and store them in an airtight container.
