Instructions:
- Preheat your oven to Broil. Place the oven rack about 6 inches from the broiler.
- Preheat your mini waffle iron for 4-5 minutes, until hot.
- In a medium bowl, stir together the mozzarella cheese, egg, almond flour, psyllium husk powder, Italian seasoning, garlic powder, and baking powder (if using).
- Pour half of the chaffle batter into the preheated mini waffle maker. Cook until browned and crispy, about 4-5 minutes. Repeat with the remaining batter. Let the chaffles cool for 5-10 minutes to firm up.
- Arrange the chaffles onto a baking sheet.
- Top each chaffle with 1.5 tablespoons of sugar-free marinara sauce, 1/4 cup of part-skim mozzarella cheese, and the turkey or chicken pepperoni slices.
- Place the pizza chaffles into the oven under the broiler for 2-3 minutes, or until the cheese is melted and browned.
- Carefully remove the chaffles from the oven.
