Ingredients:

  • 1 lb lean ground beef or ground turkey
  • 1 small onion, finely chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 14-ounce can of diced tomatoes
  • 1 8-ounce can of tomato sauce
  • 1/2 cup long-grain white rice (uncooked)
  • 1 1/2 cups low-sodium beef or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups green cabbage, chopped into bite-sized pieces
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet, cook the lean ground beef or ground turkey over medium-high heat until browned and cooked through, breaking it apart with a spatula as it cooks. Drain any excess fat if necessary.
  2. Add the chopped onion and green bell pepper to the skillet. Sauté for a few minutes until the vegetables begin to soften.
  3. Stir in the minced garlic and cook for about 30 seconds or until fragrant.
  4. Add the diced tomatoes, tomato sauce, and uncooked rice to the skillet. Mix everything together.
  5. Pour in the low-sodium beef or vegetable broth and season with dried oregano, paprika, salt, and pepper. Stir to combine.
