- 1 8-ounce can of tomato sauce
- 1/2 cup long-grain white rice (uncooked)
- 1 1/2 cups low-sodium beef or vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 cups green cabbage, chopped into bite-sized pieces
- Chopped fresh parsley for garnish (optional)
Instructions:
- In a large skillet, cook the lean ground beef or ground turkey over medium-high heat until browned and cooked through, breaking it apart with a spatula as it cooks. Drain any excess fat if necessary.
- Add the chopped onion and green bell pepper to the skillet. Sauté for a few minutes until the vegetables begin to soften.
- Stir in the minced garlic and cook for about 30 seconds or until fragrant.
- Add the diced tomatoes, tomato sauce, and uncooked rice to the skillet. Mix everything together.
- Pour in the low-sodium beef or vegetable broth and season with dried oregano, paprika, salt, and pepper. Stir to combine.
- Gently fold in the chopped cabbage, ensuring it’s well-mixed with the other ingredients.
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover the skillet and let it cook for about 20-25 minutes, or until the rice is tender and the cabbage is cooked to your desired level of tenderness.
- Check for seasoning and adjust if needed.
