Ingredients:
- 1 lb ground turkey or chicken (99% fat-free)
- 1 tablespoon sesame oil
- 1 small onion, finely chopped
- 1 red bell pepper, thinly sliced
- 1 cup shredded carrots
- 3 cups coleslaw mix (shredded cabbage and carrots)
- 3 cloves garlic, minced
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon freshly grated ginger
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
- Chopped green onions and sesame seeds for garnish (optional)
Instructions:
- In a large skillet or wok, heat the sesame oil over medium-high heat.
- Add the ground turkey or chicken and cook until browned and cooked through, breaking it apart with a spatula as it cooks. Remove any excess fat if necessary.
- Add the chopped onion, red bell pepper, and shredded carrots to the skillet. Sauté for a few minutes until the vegetables start to soften.
- Stir in the minced garlic, and cook for an additional 30 seconds or until fragrant.
- Add the coleslaw mix to the skillet and stir to combine with the meat and vegetables.
- In a small bowl, whisk together the low-sodium soy sauce, rice vinegar, freshly grated ginger, and red pepper flakes. Pour this sauce over the ingredients in the skillet.
- Continue cooking and stirring for a few more minutes until the coleslaw mix is wilted and the sauce is well-distributed.
- Season with salt and pepper to taste. Adjust the red pepper flakes if you prefer more or less heat.
- Remove from heat and garnish with chopped green onions and sesame seeds if desired.
