Weight Watchers-friendly recipe for Egg Roll in a Bowl:

 

Ingredients:

  • 1 lb ground turkey or chicken (99% fat-free)
  • 1 tablespoon sesame oil
  • 1 small onion, finely chopped
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 3 cups coleslaw mix (shredded cabbage and carrots)
  • 3 cloves garlic, minced
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon freshly grated ginger
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Chopped green onions and sesame seeds for garnish (optional)

Instructions:

  1. In a large skillet or wok, heat the sesame oil over medium-high heat.
  2. Add the ground turkey or chicken and cook until browned and cooked through, breaking it apart with a spatula as it cooks. Remove any excess fat if necessary.
  3. Add the chopped onion, red bell pepper, and shredded carrots to the skillet. Sauté for a few minutes until the vegetables start to soften.
  4. Stir in the minced garlic, and cook for an additional 30 seconds or until fragrant.
  5. Add the coleslaw mix to the skillet and stir to combine with the meat and vegetables.
  6. In a small bowl, whisk together the low-sodium soy sauce, rice vinegar, freshly grated ginger, and red pepper flakes. Pour this sauce over the ingredients in the skillet.
  7. Continue cooking and stirring for a few more minutes until the coleslaw mix is wilted and the sauce is well-distributed.
  8. Season with salt and pepper to taste. Adjust the red pepper flakes if you prefer more or less heat.
  9. Remove from heat and garnish with chopped green onions and sesame seeds if desired.
