Weight Watchers-friendly version of Dole Pineapple Whip

Ingredients (Makes 2 servings):

  • 2 cups frozen pineapple chunks
  • 1/2 cup unsweetened almond milk (or low-calorie milk of choice)
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey, sugar-free syrup, or sweetener of choice (optional)

Instructions:

  1. Blend Ingredients:
    • Add the frozen pineapple chunks, almond milk, vanilla extract, and sweetener (if using) to a high-speed blender or food processor.
  2. Blend Until Smooth:
    • Blend on high until the mixture is smooth and creamy. You may need to stop and scrape down the sides or add a tiny bit more almond milk if it’s too thick.
  3. Serve:
    • Scoop or pipe the mixture into a bowl or cup for the classic soft-serve look.
  4. Optional Freezing:
    • For a firmer texture, place the mixture in the freezer for 10–15 minutes before serving.
