Weight Watchers Garlic Cheese Biscuits Recipe
Ingredients:
1 1/2 cups all-purpose flour (or whole wheat flour for extra fiber)
1/2 cup reduced-fat shredded cheddar cheese (about 2 oz)
1 tbsp baking powder
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1/3 cup non-fat Greek yogurt (substitute for heavy cream or butter)
2 tbsp unsweetened almond milk (or skim milk)
2 tbsp light butter (melted) or a plant-based butter
1/2 tsp garlic minced (optional for more garlic flavor)
Fresh parsley (optional, for garnish)
Instructions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly spray it with non-stick spray.
In a large bowl, whisk together the flour, baking powder, garlic powder, salt, and pepper.
Add the shredded cheese and stir to combine.
In a separate bowl, mix the Greek yogurt, almond milk, and melted butter.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not over-mix.
Use a spoon or cookie scoop to portion out the dough into 8-10 biscuits, depending on desired size.
Place the biscuits on the prepared baking sheet. Optionally, you can brush the tops with a little melted butter and sprinkle with minced garlic and parsley.
Bake for 12-15 minutes or until the biscuits are golden brown on top.
Allow them to cool slightly before serving.
