Weight Watchers Healthy pepper Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper (red, yellow, or green), diced
  • 1 jalapeño, diced (seeds removed for milder flavor)
  • 1 zucchini, diced
  • 1 carrot, diced
  • 1 can (14 oz) diced tomatoes (low-sodium)
  • 4 cups vegetable broth (low-sodium)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups chopped spinach or kale
  • Juice of 1 lime
  • Fresh cilantro or parsley for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and garlic, sauté until softened.
  3. Add diced bell pepper, jalapeño, zucchini, and carrot. Cook for 5-7 minutes until vegetables are tender.
  4. Pour in diced tomatoes (with their juice) and vegetable broth.
  5. Season with dried oregano, dried basil, smoked paprika, salt, and pepper. Stir well.
  6. Bring the soup to a simmer and let it cook for about 15-20 minutes, allowing the flavors to meld.
  7. Add chopped spinach or kale and cook for an additional 5 minutes until the greens are wilted.
  8. Stir in the lime juice and adjust seasoning to taste.
  9. Serve hot, garnished with fresh cilantro or parsley.
