Weight Watchers Lemon-Glazed Blueberry Snack Cake

Ingredients:

For the Cake:

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup unsweetened applesauce

  • 1 cup fresh blueberries

For the Lemon Glaze:

  • 1/2 cup powdered sugar or sugar substitute
  • 1-2 tablespoons fresh lemon juice

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
  2. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
  3. In a large bowl, mix together applesauce, Greek yogurt, sugar or sugar substitute, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Gently fold in the fresh blueberries.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake for approximately 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, prepare the lemon glaze by whisking together powdered sugar and fresh lemon juice until smooth.
  9. Once the cake is done, allow it to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
  10. Drizzle the lemon glaze over the cooled cake.
  11. Slice and serve.
