Weight Watchers Lemon-Glazed Blueberry Snack Cake
Ingredients:
For the Cake:
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/2 cup plain non-fat Greek yogurt
- 1/2 cup granulated sugar or sugar substitute
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
For the Lemon Glaze:
- 1/2 cup powdered sugar or sugar substitute
- 1-2 tablespoons fresh lemon juice
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
- In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
- In a large bowl, mix together applesauce, Greek yogurt, sugar or sugar substitute, eggs, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Gently fold in the fresh blueberries.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for approximately 25-30 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the lemon glaze by whisking together powdered sugar and fresh lemon juice until smooth.
- Once the cake is done, allow it to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
- Drizzle the lemon glaze over the cooled cake.
- Slice and serve.
