Ingredients:

  • 1/2 cup powdered peanut butter
  • 2 tablespoons water
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons powdered sugar or a sugar substitute
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons melted coconut oil

Instructions:

  1. Prepare the peanut butter mixture:
    • In a mixing bowl, combine the powdered peanut butter and water until it forms a thick paste.
    • Add the powdered sugar (or sugar substitute), cocoa powder, vanilla extract, and a pinch of salt. Mix until well combined.
  2. Prepare the chocolate coating:
    • Melt the coconut oil in the microwave or on the stovetop until it’s completely liquid.
  3. Assemble the peanut butter cups:
    • Line a mini muffin tin with paper liners.
    • Spoon a small amount of the melted coconut oil into the bottom of each paper liner, just enough to cover the bottom.
  4. Layering:
    • Place a small amount (about 1 teaspoon) of the peanut butter mixture on top of the coconut oil in each liner, spreading it out evenly.
  5. Final layer:
    • Pour the remaining melted coconut oil over the peanut butter mixture in each cup, ensuring it covers the peanut butter layer completely.
  6. Chill and set:
    • Place the muffin tin in the refrigerator for at least 30 minutes or until the peanut butter cups are firm.
  7. Serve:
