Weight Watchers Pepperoni Pizza Bites

Ingredients:

  • 1 package (16 oz) refrigerated pizza dough
  • 1 cup pizza sauce (look for a lower-sugar option)
  • 1 1/2 cups part-skim mozzarella cheese, shredded
  • 1/2 cup mini pepperoni slices
  • 1 tsp dried oregano
  • Cooking spray

Instructions:

  1. Preheat your oven according to the pizza dough package instructions.
  2. Roll out the pizza dough on a lightly floured surface. Cut the dough into bite-sized squares or use a small round cutter.
  3. Preheat a non-stick skillet over medium heat. Add mini pepperoni slices and cook for 2-3 minutes until they release some of their oils. Remove from heat and set aside.
  4. Spread pizza sauce evenly over each pizza dough square. Sprinkle with shredded mozzarella cheese and top with mini pepperoni slices.
  5. Sprinkle dried oregano over the top for added flavor.
  6. Place the pizza bites on a baking sheet sprayed with cooking spray.
  7. Bake in the preheated oven according to the pizza dough package instructions or until the cheese is melted and bubbly, and the edges of the dough are golden brown.
  8. Remove from the oven and let them cool slightly before serving.
