Weight Watchers Strawberry and cottage cheese muffins – 1 point.

Ingredients:

  • 1 cup fresh strawberries, diced
  • 1 cup low-fat cottage cheese
  • 2 eggs
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sweetener (such as erythritol or stevia)
  • 1 cup oat flour (you can make your own by blending rolled oats)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • A pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.
  2. In a blender or food processor, combine the cottage cheese, eggs, applesauce, vanilla extract, and sweetener. Blend until smooth.
  3. In a separate bowl, whisk together the oat flour, baking powder, baking soda, and a pinch of salt.
  4. Pour the wet mixture from the blender into the dry mixture in the bowl. Stir until well combined.
  5. Gently fold in the diced strawberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake in the preheated oven for about 18-20 minutes or until a toothpick inserted into a muffin comes out clean.
  8. Allow the muffins to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
