Ingredients:
- 1 cup fresh strawberries, diced
- 1 cup low-fat cottage cheese
- 2 eggs
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/4 cup granulated sweetener (such as erythritol or stevia)
- 1 cup oat flour (you can make your own by blending rolled oats)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- A pinch of salt
Instructions:
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.
- In a blender or food processor, combine the cottage cheese, eggs, applesauce, vanilla extract, and sweetener. Blend until smooth.
- In a separate bowl, whisk together the oat flour, baking powder, baking soda, and a pinch of salt.
- Pour the wet mixture from the blender into the dry mixture in the bowl. Stir until well combined.
- Gently fold in the diced strawberries.
- Divide the batter evenly among the muffin cups.
- Bake in the preheated oven for about 18-20 minutes or until a toothpick inserted into a muffin comes out clean.
- Allow the muffins to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
