Ingredients:

  • 1 pound lean ground turkey or extra-lean ground beef
  • 1 onion, finely chopped
  • 1 bell pepper (any color), diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix (preferably low-sodium)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 cup salsa (choose a lower-sugar option)
  • 1 cup fat-free Greek yogurt or fat-free sour cream
  • 1 cup reduced-fat shredded cheddar cheese
  • Cooking spray
  • Optional toppings: chopped tomatoes, sliced green onions, cilantro, shredded lettuce

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Cook Ground Turkey:
    • In a large skillet, cook the lean ground turkey (or beef) over medium heat until browned. Drain any excess fat.
  3. Sauté Vegetables:
    • Add chopped onion, diced bell pepper, and minced garlic to the skillet. Sauté until the vegetables are softened.
  4. Season and Add Beans:
    • Stir in the taco seasoning mix, black beans, and frozen corn. Cook for an additional 2-3 minutes.
  5. Assemble Casserole:
    • Lightly coat a casserole dish with cooking spray. Spread the turkey and vegetable mixture evenly in the dish.
  6. Layer with Salsa:
    • Pour the salsa over the turkey mixture and spread it evenly.
  7. Spread Yogurt and Cheese:
    • In a bowl, mix fat-free Greek yogurt (or fat-free sour cream) with half of the shredded cheddar cheese. Spread this mixture over the salsa layer.
  8. Top with Cheese:
    • Sprinkle the remaining shredded cheddar cheese over the top.
  9. Bake:
    • Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
  10. Serve:
    • Remove from the oven, let it cool for a few minutes, then slice and serve. Optionally, top with chopped tomatoes, sliced green onions, cilantro, or shredded lettuce.
