Ingredients:
For the Pie:
- 1 pound lean ground turkey or chicken
- 1 small onion, finely chopped
- 1 packet taco seasoning (choose a lower-sodium variety)
- 1/2 cup water
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup salsa
- 1 cup reduced-fat shredded cheddar cheese
- 4 large whole wheat tortillas
For Toppings (optional):
- Chopped tomatoes
- Shredded lettuce
- Low-fat sour cream
- Sliced jalapeños
- Chopped cilantro
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground turkey or chicken over medium heat until browned. Drain any excess fat.
- Add the chopped onion to the skillet and cook until the onion is softened.
- Stir in the taco seasoning and water. Simmer for a few minutes until the mixture thickens.
- Add the black beans, corn, and salsa to the skillet. Mix well and let it simmer for an additional 5 minutes.
- Spray a pie dish with cooking spray. Place one whole wheat tortilla at the bottom of the dish.
- Spoon a portion of the turkey mixture onto the tortilla, spreading it evenly.
- Sprinkle a portion of the shredded cheddar cheese over the turkey mixture.
- Repeat the layers with the remaining tortillas, turkey mixture, and cheese, finishing with a layer of cheese on top.
- Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
- Let the taco pie cool for a few minutes before slicing.
- Serve slices with optional toppings such as chopped tomatoes, shredded lettuce, low-fat sour cream, sliced jalapeños, and chopped cilantro.
