White chicken chili tacos

Ingredients:

For the White Chicken Chili:

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cans (15 ounces each) white beans (cannellini or Great Northern), drained and rinsed
  • 1 can (4 ounces) diced green chilies
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 1 cup frozen corn kernels
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

For Tacos:

  • Small taco-sized tortillas
  • Shredded Monterey Jack or Mexican blend cheese
  • Sliced jalapeños (optional)
  • Sour cream or Greek yogurt (for topping)
  • Avocado slices (for topping)

Instructions:

For White Chicken Chili:

  1. Cook Chicken:
    • In a large pot or Dutch oven, heat olive oil over medium heat. Add chicken breasts and cook until browned on both sides. Remove and set aside.
  2. Sauté Aromatics:
    • In the same pot, add chopped onion and sauté until translucent. Add minced garlic and cook for an additional 1-2 minutes.
  3. Combine Ingredients:
    • Return the browned chicken to the pot. Add white beans, diced green chilies, ground cumin, dried oregano, ground coriander, chili powder, and chicken broth. Season with salt and pepper to taste.
  4. Simmer:
    • Bring the mixture to a simmer, cover, and let it cook for about 20-25 minutes or until the chicken is cooked through.
  5. Shred Chicken:
    • Remove the chicken from the pot, shred it using two forks, and return it to the pot.
  6. Add Corn and Lime Juice:
    • Add frozen corn kernels and lime juice to the pot. Simmer for an additional 5-10 minutes.
  7. Adjust Seasoning:
    • Taste and adjust seasoning as needed. Garnish with chopped cilantro.

For Tacos:

  1. Assemble Tacos:
    • Warm the taco-sized tortillas. Spoon the white chicken chili into each tortilla.
  2. Add Toppings:
    • Top with shredded cheese, sliced jalapeños (if using), a dollop of sour cream or Greek yogurt, and avocado slices.
