WW Italian Pasta Salad

Ingredients:

For the Salad:
  • 8 oz whole wheat or multigrain pasta (choose based on your preferred point value)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup reduced-fat feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
For the Dressing:
  • 3 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to package instructions. Drain and let it cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, black olives, red onion, feta cheese, and fresh basil.
  3. In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, honey or maple syrup, minced garlic, salt, and pepper to make the dressing.
  4. Pour the dressing over the pasta salad and toss until all ingredients are well coated.
  5. Refrigerate the pasta salad for at least 30 minutes before serving to allow the flavors to meld.
  6. Before serving, toss the salad again and adjust the seasoning if needed.
  7. Serve chilled and enjoy your Weight Watchers Italian Pasta Salad!
