Ingredients:-
- 1 cup dried lentils
- 4 cups vegetable or chicken broth (low-sodium)
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley or cilantro (optional, for garnish)
Instructions:-
- Prepare Lentils: Rinse the lentils under cold water and drain them.
- Sauté Vegetables: In a large pot or Dutch oven, spray some cooking spray and sauté the onions, carrots, and celery until they begin to soften, for about 5 minutes. Add the minced garlic and continue cooking for another minute.
- Add Spices and Lentils: Stir in the cumin, paprika, and drained lentils. Mix well with the vegetables.
- Pour Broth: Add the vegetable or chicken broth to the pot. Bring it to a boil.
- Simmer: Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes or until the lentils are tender.
- Season and Serve: Season with salt and pepper according to your taste. Garnish with fresh parsley or cilantro if desired….
