Parmesan Crusted ChickenThis is absolutely delicious. Don’t change a thing! I took this to a house party and everyone loved it but I’ve been making it at home just for us too
*Ingredients:**
– 4 boneless, skinless chicken breasts
– 1/2 cup grated Parmesan cheese (reduced-fat if possible)
– 1/2 cup Panko breadcrumbs (whole wheat or low-fat)
– 2 teaspoons garlic powder
– 2 teaspoons paprika
– Salt and pepper to taste
– 1/4 cup light mayonnaise (or Greek yogurt for fewer points)
– Cooking spray or 1 tsp olive oil (optional)
**Instructions:**
1. **Preheat oven:** Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly spray with cooking spray.
2. **Prepare the coating:** In a small bowl, mix together the grated Parmesan, Panko breadcrumbs, garlic powder, paprika, salt, and pepper.
3. **Prepare the chicken:** Spread a thin layer of light mayonnaise or Greek yogurt on each chicken breast, covering both sides.
4. **Coat the chicken:** Dredge each chicken breast in the Parmesan mixture, pressing gently to ensure it sticks evenly.
5. **Bake:** Place the coated chicken breasts on the prepared baking sheet and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the crust is golden and crispy.
