
WW Peanut Chicken
Ingredients:
- 4 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup peanut butter (creamy or chunky, depending on preference)
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon sesame oil
- 2 tablespoons lime juice
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 2 tablespoons vegetable oil (for cooking)
- Salt and pepper to taste
- Chopped green onions and chopped peanuts for garnish (optional)
- Cooked rice or noodles for serving
Instructions:
- Prepare the Sauce:
- In a medium bowl, whisk together the peanut butter, soy sauce, honey, minced garlic, grated ginger, sesame oil, lime juice, and red pepper flakes until smooth. Set aside.
- Cook the Chicken:
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Season the chicken pieces with salt and pepper.
- Add the seasoned chicken to the skillet and cook until browned and cooked through, about 6-8 minutes.
- Combine Chicken and Sauce:
- Once the chicken is cooked, reduce the heat to low.
- Pour the prepared peanut sauce over the chicken in the skillet.
- Stir until the chicken is evenly coated with the sauce.
- Allow the chicken and sauce to simmer together for 2-3 minutes until heated through and the flavors meld.
- Serve:
- Serve the peanut chicken over cooked rice or noodles.
- Garnish with chopped green onions and chopped peanuts if desired.
