WW zero point egg salad
Ingredients:
- Hard-boiled eggs (quantity depends on the number of servings)
- Fat-free Greek yogurt or fat-free mayonnaise
- Mustard (optional)
- Salt and pepper to taste
- Chopped green onions or chives (optional)
- Celery, finely diced (optional)
- Paprika (optional, for garnish)
Instructions:
- Hard-boil the eggs: Place the eggs in a saucepan and cover them with water. Bring the water to a boil, then reduce the heat and let the eggs simmer for about 10-12 minutes. Remove from heat and let them cool before peeling.
- Once the eggs are cooled, peel them and chop them into small pieces.
- In a mixing bowl, combine the chopped eggs with fat-free Greek yogurt or fat-free mayonnaise. The amount you use depends on your taste and desired consistency. Start with a few tablespoons and add more as needed.
- If desired, add mustard for extra flavor. You can also add chopped green onions, chives, or finely diced celery for crunch and additional flavor.
- Season the egg salad with salt and pepper to taste. Mix everything together until well combined.
- Taste the egg salad and adjust the seasoning or add more yogurt/mayonnaise if needed.
- Sprinkle paprika on top for garnish if desired.
- Serve the egg salad chilled. You can enjoy it on its own, as a sandwich filling, or with crackers or vegetables for dipping.
