Ingredients:

2 cups cooked chicken breast, shredded or diced (skinless, boneless)

1/4 cup celery, finely chopped
1/4 cup red onion, finely chopped
1/4 cup cucumber, finely diced (optional)
1/4 cup fresh parsley, chopped (optional)
Salt and pepper, to taste

1/2 teaspoon garlic powder (optional)
1/2 teaspoon onion powder (optional)

Instructions:

Prepare the Chicken:
