Zero Point Crustless Pumpkin Pie

Ingredients:

  • 1 can (15 oz) pure pumpkin puree
  • 1 cup unsweetened applesauce
  • 1 cup plain non-fat Greek yogurt
  • 3/4 cup zero-calorie sweetener (such as Stevia or your preferred sweetener)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 4 large eggs

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Pumpkin Mixture:
    • In a large mixing bowl, combine the pumpkin puree, applesauce, Greek yogurt, zero-calorie sweetener, vanilla extract, ground cinnamon, ground ginger, ground nutmeg, and salt. Mix until well combined.
  3. Add Eggs:
    • Beat the eggs separately in a small bowl and then add them to the pumpkin mixture. Mix until the eggs are fully incorporated.
  4. Pour into Pie Dish:
    • Grease a pie dish and pour the pumpkin mixture into it.
  5. Bake:
    • Bake in the preheated oven for 45-50 minutes or until the center is set and a toothpick inserted comes out clean.
  6. Cool:
    • Allow the crustless pumpkin pie to cool completely before slicing.
  7. Serve:
    • Once cooled, slice and serve. You can optionally top each slice with a dollop of fat-free whipped topping for added flavor.
