Ingredients:

  • 2 cups fat-free Greek yogurt
  • 1 cup fat-free cottage cheese
  • 2 large eggs
  • 1/2 cup unsweetened applesauce (as a sugar substitute)
  • 1 teaspoon vanilla extract
  • Zest of one lemon (optional, for flavor)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 325°F (163°C).
  2. Prepare Pan:
    • Lightly coat a small springform pan with cooking spray.
  3. Blend Ingredients:
    • In a blender or food processor, combine fat-free Greek yogurt, fat-free cottage cheese, eggs, applesauce, vanilla extract, and lemon zest. Blend until smooth.
  4. Bake:
    • Pour the mixture into the prepared springform pan.
  5. Bake in the Preheated Oven:
    • Bake for about 40-45 minutes or until the center is set. Keep an eye on it to avoid overcooking.
  6. Cool:
    • Allow the cheesecake to cool in the oven with the door ajar for about an hour, then transfer to the refrigerator to chill for at least 4 hours or overnight.
  7. Serve:
    • Once chilled, remove from the springform pan, slice, and serve.
