Ingredients:
For the crust:
- 1 1/2 cups crushed graham crackers (use whole wheat for fewer points)
- 3 tablespoons unsweetened applesauce
For the filling:
- 2 cups fat-free Greek yogurt
- 8 oz fat-free cream cheese
- 1/2 cup granulated artificial sweetener (like Stevia or Splenda)
- 2 large eggs
- 1 teaspoon vanilla extract
- Zest of one lemon (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the crushed graham crackers with the unsweetened applesauce until well combined. Press this mixture into the bottom of a 9-inch (23 cm) springform pan to create the crust.
- In a separate bowl, beat the fat-free cream cheese until smooth. You can use a hand mixer or a stand mixer for this.
- Add the fat-free Greek yogurt, artificial sweetener, eggs, vanilla extract, and lemon zest (if using) to the cream cheese. Mix until all the ingredients are well combined.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake the cheesecake in the preheated oven for about 30-35 minutes or until the edges are set, but the center is slightly jiggly.
- Turn off the oven and crack the oven door. Let the cheesecake sit in the oven for another 30 minutes.
- Remove the cheesecake from the oven and allow it to cool to room temperature. Then refrigerate it for at least 4 hours or overnight to fully set.
- Once the cheesecake is chilled and set, remove it from the springform pan and slice it into portions.
- You can serve it as is or with some fresh berries on top for extra flavor and a minimal point value.
