Ingredients:

For the crust:

  • 1 1/2 cups crushed graham crackers (use whole wheat for fewer points)
  • 3 tablespoons unsweetened applesauce

For the filling:

  • 2 cups fat-free Greek yogurt
  • 8 oz fat-free cream cheese
  • 1/2 cup granulated artificial sweetener (like Stevia or Splenda)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of one lemon (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the crushed graham crackers with the unsweetened applesauce until well combined. Press this mixture into the bottom of a 9-inch (23 cm) springform pan to create the crust.
  3. In a separate bowl, beat the fat-free cream cheese until smooth. You can use a hand mixer or a stand mixer for this.
  4. Add the fat-free Greek yogurt, artificial sweetener, eggs, vanilla extract, and lemon zest (if using) to the cream cheese. Mix until all the ingredients are well combined.
  5. Pour the cheesecake filling over the crust in the springform pan.
  6. Bake the cheesecake in the preheated oven for about 30-35 minutes or until the edges are set, but the center is slightly jiggly.
  7. Turn off the oven and crack the oven door. Let the cheesecake sit in the oven for another 30 minutes.
  8. Remove the cheesecake from the oven and allow it to cool to room temperature. Then refrigerate it for at least 4 hours or overnight to fully set.
  9. Once the cheesecake is chilled and set, remove it from the springform pan and slice it into portions.
