- 1/4 cup cream cheese (softened)
- 1 large egg
- 1/2 tsp baking powder
- 1/4 tsp garlic powder (optional)
- 1/4 tsp salt
- 1-2 tbsp olive oil (for frying or brushing)
- Fresh herbs (optional, for garnish)
Instructions:
- Prepare the dough:
- Preheat your oven to 350°F (175°C).
- In a microwave-safe bowl, melt the mozzarella and cream cheese together. Microwave for 20-30 seconds and stir until smooth and combined.
- In a separate bowl, whisk together the almond flour, flaxseed (if using), baking powder, garlic powder, and salt.
- Add the egg to the dry ingredients and mix well.
- Pour the melted mozzarella and cream cheese into the dry ingredients and stir until everything is well combined. The dough will be sticky, but that’s normal.
- Shape the flatbreads:
- Place a sheet of parchment paper on a baking tray. Transfer the dough onto the parchment paper.
- Wet your hands (to prevent sticking) and divide the dough into small portions, shaping them into flat circles or ovals about 1/4 inch thick.
- If you prefer a crispy flatbread, make the dough thinner.
- Bake:
- Place the tray in the preheated oven and bake for 10-12 minutes or until the edges are golden brown.
- Optional – Fry for extra crispness:
- Heat a skillet over medium heat and add 1 tbsp olive oil. Once the flatbread comes out of the oven, you can fry each piece for 1-2 minutes on each side to make it crispy. This step adds a nice crunch but is optional.
- Serve:
- Garnish with fresh herbs or any additional toppings you like (cheese, butter, or dipping sauce). Serve immediately.

- If you want to make the flatbread more flavorful, you can add herbs or spices (like rosemary or oregano) directly into the dough.
