30-minute keto flatbread recipe

Ingredients:

  • 1 cup almond flour
  • 2 tbsp ground flaxseed (optional for texture)
  • 1/4 cup shredded mozzarella cheese (for a doughy texture)
  • 1/4 cup cream cheese (softened)
  • 1 large egg
  • 1/2 tsp baking powder
  • 1/4 tsp garlic powder (optional)
  • 1/4 tsp salt
  • 1-2 tbsp olive oil (for frying or brushing)
  • Fresh herbs (optional, for garnish)

Instructions:

  1. Prepare the dough:
    • Preheat your oven to 350°F (175°C).
    • In a microwave-safe bowl, melt the mozzarella and cream cheese together. Microwave for 20-30 seconds and stir until smooth and combined.
    • In a separate bowl, whisk together the almond flour, flaxseed (if using), baking powder, garlic powder, and salt.
    • Add the egg to the dry ingredients and mix well.
    • Pour the melted mozzarella and cream cheese into the dry ingredients and stir until everything is well combined. The dough will be sticky, but that’s normal.
  2. Shape the flatbreads:
    • Place a sheet of parchment paper on a baking tray. Transfer the dough onto the parchment paper.
    • Wet your hands (to prevent sticking) and divide the dough into small portions, shaping them into flat circles or ovals about 1/4 inch thick.
    • If you prefer a crispy flatbread, make the dough thinner.
  3. Bake:
    • Place the tray in the preheated oven and bake for 10-12 minutes or until the edges are golden brown.
  4. Optional – Fry for extra crispness:
    • Heat a skillet over medium heat and add 1 tbsp olive oil. Once the flatbread comes out of the oven, you can fry each piece for 1-2 minutes on each side to make it crispy. This step adds a nice crunch but is optional.
  5. Serve:
    • Garnish with fresh herbs or any additional toppings you like (cheese, butter, or dipping sauce). Serve immediately.

Tips:

  • If you want to make the flatbread more flavorful, you can add herbs or spices (like rosemary or oregano) directly into the dough.
  • You can also use this flatbread as a base for keto pizza!
