Instructions:
1. Prepare an Ice Bath:
- Fill a large bowl with ice cubes and add some salt to it. Set aside.
2. Mix the Ice Cream Base:
- In a separate mixing bowl, combine the heavy whipping cream, powdered erythritol (or your chosen sweetener), vanilla extract, and a pinch of salt. If you want chocolate-flavored ice cream, add the unsweetened cocoa powder as well.
3. Whisk Until Thickened:
- Use a hand mixer or a whisk to beat the mixture until it thickens and forms soft peaks. This should take just a few minutes.
4. Cool in the Ice Bath:
- Place the mixing bowl with the ice cream base into the prepared ice bath. Continue to whisk until the mixture cools down. This should only take a minute or two.
5. Serve:
- Scoop the keto ice cream into serving bowls or containers.
- You can enjoy it right away as a soft-serve ice cream, or you can freeze it for a firmer texture.
