5-Minute WW Mug Cupcake

Ingredients:

  • 3 tablespoons self-rising flour (or regular flour + 1/4 tsp baking powder)

  • 1 tablespoon unsweetened applesauce

  • 1 tablespoon unsweetened almond milk (or skim milk)

  • 1/2 tablespoon zero-calorie sweetener (like Stevia or monk fruit)

  • 1/4 teaspoon vanilla extract

  • 1/2 tablespoon mini chocolate chips (optional for 1 extra point)

  • A tiny pinch of salt


Instructions:

  1. In a microwave-safe mug, mix all the dry ingredients: flour, sweetener, and salt.

  2. Add in applesauce, almond milk, and vanilla extract. Stir until smooth.

  3. Sprinkle a few mini chocolate chips on top (optional).

  4. Microwave on high for 60 to 90 seconds — until the cupcake rises and sets.
