Ingredients:
- 4 medium-sized apples (peeled, cored, and diced)
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 8 small flour tortillas
- Cooking spray or oil for brushing
- Cinnamon sugar (optional, for coating)
Instructions:
- In a bowl, combine the diced apples, sugar, ground cinnamon, nutmeg, and lemon juice. Toss until the apples are well coated.
- Heat the mixture in a skillet over medium heat, stirring occasionally, until the apples are softened and caramelized, about 5-7 minutes. Remove from heat and let it cool slightly.
- Preheat your air fryer to 375°F (190°C).
- Spoon a couple of tablespoons of the apple mixture onto each tortilla, spreading it along the center of the tortilla.
- Roll up the tortillas tightly, forming taquito shapes. Place them seam-side down on a plate.
- Lightly brush the taquitos with cooking spray or a small amount of oil to help them crisp up in the air fryer.
- Arrange the taquitos in the air fryer basket, leaving space between each.
- Air fry at 375°F (190°C) for 8-10 minutes, or until the taquitos are golden brown and crispy.
- Optional: While the taquitos are still warm, you can roll them in cinnamon sugar for an extra sweet touch.
- Allow the taquitos to cool slightly before serving.
