Air Fryer Apple Pie Taquitos

Ingredients:

  • 4 medium-sized apples (peeled, cored, and diced)
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 8 small flour tortillas
  • Cooking spray or oil for brushing
  • Cinnamon sugar (optional, for coating)

Instructions:

  1. In a bowl, combine the diced apples, sugar, ground cinnamon, nutmeg, and lemon juice. Toss until the apples are well coated.
  2. Heat the mixture in a skillet over medium heat, stirring occasionally, until the apples are softened and caramelized, about 5-7 minutes. Remove from heat and let it cool slightly.
  3. Preheat your air fryer to 375°F (190°C).
  4. Spoon a couple of tablespoons of the apple mixture onto each tortilla, spreading it along the center of the tortilla.
  5. Roll up the tortillas tightly, forming taquito shapes. Place them seam-side down on a plate.
  6. Lightly brush the taquitos with cooking spray or a small amount of oil to help them crisp up in the air fryer.
  7. Arrange the taquitos in the air fryer basket, leaving space between each.
  8. Air fry at 375°F (190°C) for 8-10 minutes, or until the taquitos are golden brown and crispy.
  9. Optional: While the taquitos are still warm, you can roll them in cinnamon sugar for an extra sweet touch.
  10. Allow the taquitos to cool slightly before serving.
