Air Fryer Bacon wrapped Scallops

Air Fryer Bacon wrapped Scallops

Ingredients:

  • Fresh scallops (about 10-12 large scallops)
  • Thinly sliced bacon (1 strip per scallop)
  • Olive oil (for brushing)
  • Salt and pepper (to taste)
  • Toothpicks or wooden skewers (for securing the bacon)

Instructions:

  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. While the air fryer is preheating, prepare the scallops and bacon. Pat the scallops dry with a paper towel, as excess moisture can affect the bacon’s crispiness. Wrap each scallop with a strip of bacon and secure it with a toothpick or wooden skewer.
  3. Brush the bacon-wrapped scallops with a little olive oil. This will help them brown and become crispy in the air fryer.
  4. Season the scallops with a pinch of salt and pepper. You can also add other seasonings like garlic powder, paprika, or your favorite seafood seasoning for extra flavor.
  5. Place the bacon-wrapped scallops in a single layer in the air fryer basket, making sure they’re not touching each other. If your air fryer is on the smaller side, you may need to cook them in batches.
  6. Cook the scallops in the air fryer at 400°F (200°C) for about 10-12 minutes, flipping them halfway through the cooking time. The bacon should become crispy and the scallops should be opaque and cooked through.
  7. Cooking times can vary depending on the size of your scallops and the thickness of the bacon, so it’s essential to keep an eye on them to avoid overcooking.
  8. Once the bacon-wrapped scallops are cooked to your desired level of crispiness, carefully remove them from the air fryer using tongs.
  9. Let them cool for a minute or two, then serve them hot. You can garnish them with fresh herbs or a squeeze of lemon juice for added freshness and flavor.
