Air Fryer Fried Rice

Air Fryer Fried Rice
  • 2 cups cooked and cooled rice (preferably day-old rice)
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (e.g., peas, carrots, corn, bell peppers)
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon sesame oil
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Green onions or cilantro for garnish (optional)

Instructions:

  1. Preheat the Air Fryer: Preheat your air fryer to 370°F (185°C) for a few minutes.
  2. Stir-Fry Vegetables: In a bowl, toss the mixed vegetables with a little vegetable oil and season with salt and pepper. Place them in the air fryer basket in a single layer. Cook for about 5-7 minutes or until they are tender, shaking the basket halfway through.
  3. Cook Chicken: While the vegetables are cooking, you can also cook your diced chicken in the air fryer for about 8-10 minutes or until it’s cooked through.
  4. Prepare the Eggs: In a separate bowl, beat the eggs and season with a pinch of salt and pepper. Pour the beaten eggs into a greased, oven-safe dish or a cake pan that fits inside your air fryer basket.
  5. Cook Eggs: Place the dish with the beaten eggs in the air fryer basket alongside the vegetables. Cook for about 4-5 minutes, or until the eggs are set. Remove the eggs and let them cool, then cut them into small pieces.
  6. Fry the Rice: In a large mixing bowl, add the cooked and cooled rice. Drizzle with soy sauce and oyster sauce, if using, and stir to combine. Add the minced garlic and diced chicken.
  7. Combine Ingredients: Add the cooked vegetables, chopped eggs, and sesame oil to the rice mixture. Gently fold everything together until well combined.
  8. Air Fry Fried Rice: Place the fried rice mixture in the air fryer basket. Cook at 370°F (185°C) for about 5-7 minutes, stirring occasionally, until the fried rice is heated through and starts to develop a crispy texture.
  9. Serve: Garnish your air fryer fried rice with chopped green onions or cilantro, if desired. Serve hot and enjoy!
