- 2 cups cooked and cooled rice (preferably day-old rice)
- 1 cup cooked chicken, diced
- 1 cup mixed vegetables (e.g., peas, carrots, corn, bell peppers)
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon vegetable oil
- 1/2 teaspoon sesame oil
- 2 eggs, beaten
- Salt and pepper to taste
- Green onions or cilantro for garnish (optional)
Instructions:
- Preheat the Air Fryer: Preheat your air fryer to 370°F (185°C) for a few minutes.
- Stir-Fry Vegetables: In a bowl, toss the mixed vegetables with a little vegetable oil and season with salt and pepper. Place them in the air fryer basket in a single layer. Cook for about 5-7 minutes or until they are tender, shaking the basket halfway through.
- Cook Chicken: While the vegetables are cooking, you can also cook your diced chicken in the air fryer for about 8-10 minutes or until it’s cooked through.
- Prepare the Eggs: In a separate bowl, beat the eggs and season with a pinch of salt and pepper. Pour the beaten eggs into a greased, oven-safe dish or a cake pan that fits inside your air fryer basket.
- Cook Eggs: Place the dish with the beaten eggs in the air fryer basket alongside the vegetables. Cook for about 4-5 minutes, or until the eggs are set. Remove the eggs and let them cool, then cut them into small pieces.
- Fry the Rice: In a large mixing bowl, add the cooked and cooled rice. Drizzle with soy sauce and oyster sauce, if using, and stir to combine. Add the minced garlic and diced chicken.
- Combine Ingredients: Add the cooked vegetables, chopped eggs, and sesame oil to the rice mixture. Gently fold everything together until well combined.
- Air Fry Fried Rice: Place the fried rice mixture in the air fryer basket. Cook at 370°F (185°C) for about 5-7 minutes, stirring occasionally, until the fried rice is heated through and starts to develop a crispy texture.
- Serve: Garnish your air fryer fried rice with chopped green onions or cilantro, if desired. Serve hot and enjoy!
