Air fryer Lemon blueberry bread

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of one lemon
  • 1 tablespoon lemon juice
  • 1 cup fresh or frozen blueberries

Instructions:

  1. Preheat your air fryer to 325°F (160°C).
  2. In a mixing bowl, cream together the softened butter and sugar until it’s light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the lemon zest and lemon juice, mixing until well combined.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  7. Gently fold in the blueberries.
  8. Grease a loaf pan that fits inside your air fryer basket and pour the batter into it.
  9. Place the loaf pan in the preheated air fryer basket and set the timer for 35-40 minutes.
  10. Check for doneness by inserting a toothpick into the center of the bread. If it comes out clean, the bread is ready. If not, continue to cook in 5-minute increments until done.
  11. Once the bread is done, remove it from the air fryer and allow it to cool in the pan for about 10 minutes.
  12. Carefully remove the bread from the pan and let it cool completely on a wire rack.
  13. Slice and enjoy your air fryer lemon blueberry bread!
