Air Fryer Meatloaf

Ingredients:

  • 1.5 pounds ground beef (or a mixture of beef and pork)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/4 cup ketchup
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika

Glaze:

  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard

Instructions:

  1. Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C).
  2. Prepare the Meat Mixture: In a large bowl, combine ground beef, breadcrumbs, milk, ketchup, chopped onion, minced garlic, beaten eggs, Worcestershire sauce, thyme, oregano, salt, black pepper, and paprika. Mix until well combined.
  3. Shape the Meatloaf: Form the meat mixture into a loaf shape and place it in the air fryer basket. Make sure it’s not too thick to allow even cooking.
  4. Prepare the Glaze: In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard to create the glaze.
  5. Apply the Glaze: Brush the glaze over the top of the meatloaf, ensuring an even coating.
  6. Air Fry: Place the air fryer basket in the preheated air fryer and cook the meatloaf at 375°F (190°C) for about 25-30 minutes. Halfway through the cooking time, you can brush on additional glaze if desired.
  7. Check for Doneness: Use a meat thermometer to ensure the internal temperature reaches at least 160°F (71°C).
  8. Rest and Serve: Allow the meatloaf to rest for a few minutes before slicing. This helps retain juices and makes it easier to slice.
  9. Serve: Slice the meatloaf and serve with your favorite sides. Enjoy!
