Ingredients:
- 2 large egg whites
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract (optional)
Instructions:
- Preheat your air fryer to 300°F (150°C) for a few minutes.
- In a clean, dry bowl, add the egg whites. Make sure there is no trace of egg yolk, as any fat can prevent the egg whites from whipping properly. It’s best to use room temperature egg whites for this.
- Begin whipping the egg whites with an electric mixer on low speed until they start to get foamy.
- Gradually increase the mixer’s speed to medium-high and continue whipping until soft peaks form. Soft peaks are achieved when the meringue holds its shape but the tips curl over when you lift the beaters.
- While still whipping, gradually add the granulated sugar, a tablespoon at a time, until the sugar is fully incorporated and the meringue is glossy and forms stiff peaks. Stiff peaks are when the meringue holds its shape and the tips stand straight up.
- If desired, you can add the vanilla extract and gently fold it into the meringue.
- Line the air fryer basket or tray with parchment paper.
- Using a piping bag or a spoon, create meringue nests or shapes on the parchment paper. Make sure to leave enough space between them as they will expand slightly.
- Place the meringues in the preheated air fryer and cook at 300°F (150°C) for about 10-15 minutes. Keep an eye on them, as cooking times may vary depending on your specific air fryer model.
- The meringues are done when they are dry to the touch and easily lift off the parchment paper. They should have a crispy exterior and a slightly chewy interior.
- Allow the meringues to cool before removing them from the parchment paper.
