Air fryer Tomato Melt

Ingredients:

  • 2 large ripe tomatoes
  • 2 slices of your favorite bread (sourdough or whole wheat work well)
  • 1/2 cup shredded mozzarella cheese
  • 2-3 fresh basil leaves, chopped
  • Olive oil (for drizzling)
  • Salt and pepper to taste

Instructions:

  1. Preheat your air fryer to 375°F (190°C) for a few minutes.
  2. While the air fryer is preheating, slice the tomatoes into thick rounds, about 1/2 inch thick. You may want to lightly salt and pepper them to add some flavor.
  3. Place the bread slices on a clean surface or a cutting board. Drizzle a little olive oil on one side of each bread slice. This will help the bread become crispy in the air fryer.
  4. Place the tomato slices on top of one of the bread slices, followed by the chopped basil.
  5. Sprinkle the shredded mozzarella cheese evenly over the tomato and basil.
  6. Top the sandwich with the other slice of bread, olive oil side facing up.
  7. Carefully transfer the assembled sandwich to the preheated air fryer basket.
  8. Cook in the air fryer at 375°F (190°C) for 5-6 minutes or until the bread is golden brown and the cheese is melted and bubbly. Cooking times may vary depending on your specific air fryer model, so keep an eye on it.
  9. Once the sandwich is done, carefully remove it from the air fryer using tongs or a spatula.
  10. Allow it to cool for a minute or two before slicing it in half and serving.
