Instructions:
- Start by grating the zucchinis using a box grater or a food processor. Place the grated zucchini in a bowl and sprinkle with the 1/2 teaspoon of salt. This will help draw out excess moisture. Let it sit for about 10-15 minutes, then squeeze out the liquid from the zucchini using a clean kitchen towel or cheesecloth.
- In a large mixing bowl, combine the squeezed zucchini, breadcrumbs, grated Parmesan cheese, chopped herbs, minced garlic, chopped onion or scallions, beaten egg, and black pepper. Mix everything together until well combined.
- Preheat your air fryer to 375°F (190°C).
- Shape the zucchini mixture into small fritters or patties. You can use your hands or a spoon to form them. Make sure they are compact and hold together well.
- Lightly grease the air fryer basket or tray with a little olive oil or cooking spray to prevent sticking.
