Air Fryer Zucchini Fritters

Ingredients:

  • 2 medium-sized zucchinis, grated
  • 1/2 teaspoon salt (for drawing out moisture from the zucchini)
  • 1/2 cup breadcrumbs (you can use panko breadcrumbs for extra crispiness)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh herbs (e.g., parsley, dill, or basil)
  • 1/4 cup finely chopped onion or scallions
  • 1-2 cloves of garlic, minced
  • 1 large egg, beaten
  • 1/4 teaspoon black pepper
  • Olive oil or cooking spray

Instructions:

  1. Start by grating the zucchinis using a box grater or a food processor. Place the grated zucchini in a bowl and sprinkle with the 1/2 teaspoon of salt. This will help draw out excess moisture. Let it sit for about 10-15 minutes, then squeeze out the liquid from the zucchini using a clean kitchen towel or cheesecloth.
  2. In a large mixing bowl, combine the squeezed zucchini, breadcrumbs, grated Parmesan cheese, chopped herbs, minced garlic, chopped onion or scallions, beaten egg, and black pepper. Mix everything together until well combined.
  3. Preheat your air fryer to 375°F (190°C).
  4. Shape the zucchini mixture into small fritters or patties. You can use your hands or a spoon to form them. Make sure they are compact and hold together well.
  5. Lightly grease the air fryer basket or tray with a little olive oil or cooking spray to prevent sticking.
  6. Place the zucchini fritters in the air fryer basket in a single layer. Depending on the size of your air fryer, you may need to cook them in batches.
  7. Air fry the fritters at 375°F (190°C) for about 8-10 minutes, flipping them halfway through the cooking time. They should become golden brown and crispy.
  8. Once they are cooked to your desired level of crispiness, remove them from the air fryer, and serve hot.
  9. You can serve these zucchini fritters with a dipping sauce like tzatziki, marinara sauce, or a simple yogurt-based dip.
