Filling:
- 4 medium-sized apples, peeled, cored, and thinly sliced
- 1 tablespoon lemon juice
- 2 tablespoons granulated sweetener (like Stevia or any sugar substitute with zero or low SmartPoints)
Enchilada:
- 4 small whole wheat or low-carb tortillas
- 2 teaspoons ground cinnamon
- 2 tablespoons granulated sweetener
Sauce:
- 1/4 cup unsweetened applesauce
- 1 tablespoon maple syrup or sugar-free syrup (adjust to taste)
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C).
- In a bowl, toss the thinly sliced apples with lemon juice and sweetener.
- In a separate bowl, mix ground cinnamon and sweetener. Lay out the tortillas and sprinkle the cinnamon-sweetener mixture evenly over each tortilla.
- Place a portion of the sliced apples on each tortilla, leaving some space around the edges. Roll up the tortillas and place them seam-side down in a baking dish.
- In a small saucepan, heat the applesauce, maple syrup, and vanilla extract over low heat. Stir until well combined.
- Pour the sauce over the rolled tortillas in the baking dish.
- Bake in the preheated oven for about 20-25 minutes or until the tortillas are golden and slightly crispy.
- Allow the enchiladas to cool for a few minutes before serving.
- Optional: Serve with a dollop of non-fat Greek yogurt or a sprinkle of cinnamon on top.
