Apple enchilada Dessert

Ingredients:

Filling:

  • 4 medium-sized apples, peeled, cored, and thinly sliced
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sweetener (like Stevia or any sugar substitute with zero or low SmartPoints)

Enchilada:

  • 4 small whole wheat or low-carb tortillas
  • 2 teaspoons ground cinnamon
  • 2 tablespoons granulated sweetener

Sauce:

  • 1/4 cup unsweetened applesauce
  • 1 tablespoon maple syrup or sugar-free syrup (adjust to taste)
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, toss the thinly sliced apples with lemon juice and sweetener.
  3. In a separate bowl, mix ground cinnamon and sweetener. Lay out the tortillas and sprinkle the cinnamon-sweetener mixture evenly over each tortilla.
  4. Place a portion of the sliced apples on each tortilla, leaving some space around the edges. Roll up the tortillas and place them seam-side down in a baking dish.
  5. In a small saucepan, heat the applesauce, maple syrup, and vanilla extract over low heat. Stir until well combined.
  6. Pour the sauce over the rolled tortillas in the baking dish.
  7. Bake in the preheated oven for about 20-25 minutes or until the tortillas are golden and slightly crispy.
  8. Allow the enchiladas to cool for a few minutes before serving.
  9. Optional: Serve with a dollop of non-fat Greek yogurt or a sprinkle of cinnamon on top.
