Ingredients:
- 2 large flour tortillas (or cinnamon-flavored tortillas for extra sweetness)
- 2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced
- 1 tablespoon butter
- 1 tablespoon brown sugar (or sweetener of your choice)
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg (optional)
- 1/4 teaspoon vanilla extract (optional)
- 1/4 cup shredded cheddar cheese or cream cheese (optional, for extra creaminess)
- Powdered sugar (for dusting, optional)
- Whipped cream or vanilla ice cream (for serving, optional)
Instructions:
- Cook the Apples:
- In a small skillet, melt the butter over medium heat.
- Add the diced apples, brown sugar, cinnamon, nutmeg, and vanilla extract (if using).
- Cook, stirring occasionally, until the apples are softened and caramelized (about 5-7 minutes). Remove from heat and set aside.
- Assemble the Quesadillas:
- Place a tortilla on a clean surface or plate. If you’re using cheese, sprinkle a thin layer of shredded cheese on one side of the tortilla.
- Spoon the cooked apple mixture onto the center of the tortilla. If desired, you can also spread a little cream cheese for extra creaminess.
- Place a second tortilla on top to create a sandwich-like shape.
- Cook the Quesadillas:
- Heat a non-stick skillet over medium heat. You can lightly grease it with cooking spray or a little butter.
- Carefully place the quesadilla in the skillet and cook for about 2-3 minutes on each side, pressing down gently with a spatula, until golden brown and crispy on both sides.
- Serve:
- Remove from the skillet and let it cool slightly before cutting it into wedges.
- Dust with powdered sugar for extra sweetness and serve with whipped cream or a scoop of vanilla ice cream if desired.
Tips:
- Add nuts: For a bit of crunch, you can sprinkle chopped pecans or walnuts on top of the apple mixture before closing the quesadilla.
- Healthier version: Use whole wheat tortillas, and reduce the amount of sugar or use a natural sweetener like stevia or honey.
