Baigan Choka

Ingredients
3 eggplant
3 Roma tomatoes (optional)
1 scotch bonnet pepper
6 cloves of garlic, sliced into halves or thirds
1 large onion, sliced
1/2 bunch of cilantro, minced
Place oven rack in the second to highest position in your oven.
Preheat broiler for 10 minutes.
Line a baking sheet with foil.
Place eggplant, tomatoes, and pepper on baking sheet.
Make slits in eggplant and insert the garlic.
Coat eggplant, tomatoes, and pepper with olive oil.
Place baking sheet in oven.
After 10 minutes, remove pepper.
Continue roasting eggplant and tomatoes in the oven for 20 more minutes.
In a skillet, sauté onion in 2 tbsp olive oil over medium low heat for 10 minutes and add cilantro during the last few minutes.
Remove tray from the oven and carefully peel skin off of eggplant and tomatoes.
Place flesh and pepper in a heat-proof bowl and mash with a potato masher.
Add onions to mashed eggplant and season with salt. Make sure to stir well. You can serve it with roti, naan, or spread on some toast.
