Instructions:
Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Sauté the Filling: In a skillet, spray a little olive oil and sauté the mushrooms over medium heat until they release moisture and become golden brown, about 5 minutes. Add spinach, garlic powder, salt, and pepper, stirring until the spinach wilts. Remove from heat.
Assemble Quesadillas: Lay two tortillas on a flat surface. Evenly distribute the spinach and mushroom mixture over them. Sprinkle cheese on top and cover with the remaining tortillas.
Bake Quesadillas: Place the assembled quesadillas on the prepared baking sheet. Lightly spray the top tortillas with cooking spray to encourage browning. Bake for 8-10 minutes, flipping halfway, until both sides are golden and the cheese is melted.
