Black Bean Brownies

Ingredients:
1 can black beans, drained and rinsed
1/3 cup vegan honey (or any other sweetener of choice)
2 tbsp cocoa powder
1/2 tbsp baking powder
1/4 cup coconut oil
2 tbsp vanilla extract
A pinch of salt
2 tbsp sugar
Vegan chocolate chips (for folding in)
Instructions:
Preheat your oven to 350°F (175°C). Grease or line a baking dish with parchment paper.
In a blender, combine the drained and rinsed black beans, vegan honey, cocoa powder, baking powder, coconut oil, vanilla extract, salt, and sugar.
Blend the mixture until smooth and well combined. You may need to scrape down the sides of the blender to ensure all ingredients are incorporated.
Once blended, fold in vegan chocolate chips into the batter.
Pour the batter into the prepared baking dish, spreading it evenly.
Bake in the preheated oven for about 20-25 minutes, or until the edges start to pull away from the sides of the dish and a toothpick inserted into the center comes out clean.
Allow the brownies to cool completely before slicing and serving.
