Vegan Basmati rice with vegetables

Ingredients:
1 cup Basmati rice
2 cups water
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 carrot, chopped
1 red bell pepper, chopped
1 cup chopped spinach
1 tsp cumin powder
1 tsp coriander powder
Salt and pepper to taste
Fresh cilantro, chopped for garnish
Instructions:
Rinse the Basmati rice thoroughly with water and soak it for 30 minutes. Drain the water and keep the rice aside.
In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for a few minutes until the onion turns translucent.
Add the chopped carrot, red bell pepper, and spinach to the pot and sauté for another 5-7 minutes.
Add the cumin powder, coriander powder, salt, and pepper to the pot and stir well.
Add the soaked Basmati rice to the pot and stir gently to mix the rice with the vegetables.
Pour the water over the rice and vegetables and bring the mixture to a boil.
Lower the heat to a simmer and cover the pot with a tight-fitting lid. Cook for 15-20 minutes until the rice is tender and the water is absorbed.
Once the rice is cooked, turn off the heat and let it sit for 5 minutes. Fluff the rice with a fork and garnish with chopped cilantro before serving.
