Ingredients:
1 can black beans, drained and rinsed
1 can chickpeas, drained and rinsed
1 red bell pepper, diced
1 small red onion, diced
1 jalapeño pepper, seeded and minced
1/4 cup chopped fresh cilantro
1/4 cup fresh lime juice
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
In a large mixing bowl, combine the black beans, chickpeas, diced red bell pepper, diced red onion, minced jalapeño pepper, and chopped cilantro.
In a separate bowl, whisk together the lime juice, olive oil, salt, and pepper.
Pour the dressing over the bean mixture and toss well to combine.
Cover the bowl and chill the salad for at least 30 minutes before serving to allow the flavors to meld together.
Serve the black bean and chickpea salad chilled as a side dish or as a light lunch or dinner.
