buttermilk biscuits

Ingredients:
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1 tsp salt
6 tbsp vegan butter, chilled and cut into small pieces
1 cup plant-based buttermilk (1 cup unsweetened plant milk + 1 tbsp apple cider vinegar)
Instructions:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
Using a pastry blender or your fingers, cut the chilled vegan butter into the flour mixture until it resembles coarse crumbs.
Add the plant-based buttermilk and stir until the dough comes together. It will be slightly sticky.
Turn the dough out onto a floured surface and knead it gently 4-5 times.
Roll the dough out to a thickness of about 1/2 inch (1.25 cm) and cut out biscuits using a 2 1/2 inch (6.5 cm) biscuit cutter. Gather any scraps and re-roll to make more biscuits.
Place the biscuits on the prepared baking sheet and bake for 12-15 minutes, or until they are golden brown.
Serve warm with vegan butter, jam, or your favorite plant-based gravy.
