Ingredients
1 stick butter
1 diced onion
I minced garlic clove ..I used 7
1/2 cup flour
1 can coconut milk
1 can coconut cream
3 grated carrots
2 bags of Daiya shredded cheese
2 lb broccoli florets
2 qt vegan chicken stock
2 diced potatoes
Seasoning
Salt and pepper to taste
Cayenne pepper
Smoked paprika
Dry mustard Seasoning
Nutritional yeast
Creole seasoning and anything else you care to add

In pot Sautee butter, onions and carrots about 10 minutes
Add seasoning and potatoes until tender
Add flour mix well and add chicken stock and Sautee on medium low heat until vegetables are almost done
Add broccoli(put in food processor and pulse before adding to mixture)
Sautee for another 10 minutes Add coconut cream and coconut milk and I also added 1/2 container of vegan cream cheese stir and continue to simmer for about 5 minutes turn off heat leave on the hot eye then add the cheese and stir gently…let set a few minutes and then
