Vegan Caramelized Onion Tart
Ingredients:
For the crust:
- 1 1/4 cups all-purpose flour
- 1/2 cup vegan butter, cold and cubed
- 1/4 teaspoon salt
- 2-3 tablespoons ice water
For the caramelized onions:
- 4 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon sugar
- Salt and pepper to taste
For the filling:
- 1 cup vegan cream cheese
- 1/4 cup nutritional yeast
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- Prepare the crust:
- In a food processor, combine the flour and salt. Add the cold cubed vegan butter and pulse until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, until the dough comes together.
- Gather the dough into a ball, flatten it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Caramelize the onions:
- In a large skillet, heat olive oil over medium-low heat. Add the thinly sliced onions and cook slowly until they become golden brown and caramelized, about 20-30 minutes.
- Sprinkle sugar over the onions and continue cooking until they are nicely caramelized. Season with salt and pepper to taste. Set aside.
- Preheat the oven:
- Preheat your oven to 375°F (190°C).
- Roll out the crust:
- Roll out the chilled dough on a floured surface to fit your tart pan. Press the dough into the pan, trimming any excess.
- Blind bake the crust:
- Line the crust with parchment paper and fill it with pie weights or dried beans. Bake for about 15 minutes. Remove the weights and parchment paper, and bake for an additional 5-7 minutes or until the crust is golden. Allow it to cool.
- Prepare the filling:
- In a bowl, mix the vegan cream cheese, nutritional yeast, dried thyme, salt, and pepper until well combined.
- Assemble the tart:
- Spread the cream cheese mixture over the cooled crust.
- Top with the caramelized onions, spreading them evenly over the cream cheese layer.
- Bake:
- Bake the tart in the preheated oven for 15-20 minutes, or until the edges are golden brown.
- Serve:
